Geneva celebrates the Escalade
The chocolate marmite, and a Geneva menu with cardoon and longeole.
Every December, Geneva celebrates the Escalade. At Salvia Genève that means cardon épineux au gratin, longeole with lentils and, for dessert, the chocolate marmite, which the youngest and the oldest guest at the table smash together.
